Wine, cheese and grapesBiogenic Amines can be found in a number of food products including fish, cheese, meats, and fermented products such as wine or beer. Formed mainly by decarboxylation of free amino acids, some biogenic amines in high concentrations have been found to cause migraines, headaches, gastric and intestinal problems, pseudo-allergic responses, and changes in blood pressure.

Histamine has been linked to several food poisoning outbreaks involving both fish and cheese products. Because biogenic amine levels increase over time, high concentrations may also be an indicator of food quality and freshness.
